Broccoli Salad

INGREDIENTS
½ cup chopped cashews
2 tablespoons lemon juice
2 teaspoons extra-virgin olive oil
¼ teaspoon salt
Red pepper flakes to taste
4 cups roughly chopped broccoli florets
DIRECTIONS
In a blender or food processor, combine the cashews, 3 tablespoons of water, lemon juice, olive oil, salt, and red pepper flakes. In a large bowl, combine the broccoli and the cashew mixture. Mix with your hands until the broccoli is thoroughly coated. Serve immediately or cover, refrigerate, and serve chilled.
