Chai Pudding with Berries and Almonds

INGREDIENTS
1 cup chia seeds
2½ cups almond milk, soy milk, or skim milk
2 tablespoons chopped almonds
1 tablespoon honey
¼ teaspoon salt
2 cups berries
DIRECTIONS
In a small saucepan, add rice, milk, salt, and banana, and bring to a boil. Stir and reduce heat to a simmer. Cook for 10 minutes, stirring often. While rice is cooking, combine almonds with the honey and set aside. Top black rice with the almond mixture. Serve immediately or cover, refrigerate, and serve cold.
